This is a delicious vegetarian gluten-free recipe from Tim's book What a Wonderful World for Greek Fava Bean Stew. You need:
1/2 cup of olive oil
1 large onion chopped
4 celery stalks chopped
2 medium carrots chopped
2 garlic cloves crushed
1/2 cup tomato paste
1 1/2 cups vegetable stock
2 1/2 cups canned Fava or Romano beans
1/2 teaspoon cinnamon
salt and pepper to taste
Heat oil in a large sauce pan
Add onions, celery and carrots, saute for 4-5 mins
Add garlic and saute for 2 mins
Add tomato paste and water or stock
Bring to a boil; simmer for 10 mins
Add fava beans, cinnamon, salt and pepper.
Cook for 20 mins
serve over rice
